Applewood s seeking a Director of Dining Services. Director of Dining Services works under the direction of the Director of Food Services in overseeing all local and state regulatory processes and implementing all aspects of the dining program for Assisted Living, Memory Care and Healthcare operations at Applewood.  Meets all operational, financial & personnel expectations of the department.

Responsibilities

  • Ensures regulatory compliance to all CMS regulations, at all times for the Healthcare operation including those related to COVID19..  Accompanies CMS surveyor(s) during inspection of kitchen & dining room.  Immediately corrects any issues noted and provides documentation related to dining services to surveyors upon request.
  • Ensures regulatory compliance to all local health department regulations at all times – including those related to COVID19.  Accompanies local Health Inspector during inspections.  Immediately corrects any issues communicated during inspection by inspector.
  • Ensures regulatory compliance to all Advanced Standing regulations at all times for the Assisted Living and Memory Care operations including those related to COVID19.  Accompanies Advanced Standing surveyor during inspection of kitchen & AL/Memory Care dining rooms.  Immediately corrects any issues noted and provides documentation related to dining services to surveyor upon request.
  • Trains & monitors subordinate staff in all local, CMS and Advanced Standing regulations to ensure continued regulatory compliance and the highest level of service to all residents & sub-acute patients.
  • Ensures high levels of resident satisfaction by managing subordinate staff to provide excellent quality menu items and service. Attends & represents Dining Services at monthly resident council meetings for Assisted Living, Memory Care & Healthcare.  Follows up as required with staff to address issues discussed at meetings.
  • Interviews, orients, trains, schedules, coaches, counsels and reviews job performance on an ongoing basis. Completes annual performance appraisals and annual competency process for each employee. Disciplines employees as necessary; communicates job expectations; enforces Applewood and Centrastate policies and procedures.  Manages payroll process timely and effectively/
  • Achieves Dining Service operational objectives by contributing information and recommendations to strategic plans and reviews; prepares and completes action plans; implements production, productivity, quality, and customer-service standards; resolves problems; implements change as required.
  • Meets Dining service financial objectives by forecasting labor and product requirements; scheduling staff to meet operational needs, purchasing product as required; analyzing variances; initiating corrective actions.
  • Identify food customs and nutrition preferences based on race, culture, religion, and food intolerances. Interviews and orients new residents regarding the dining services program
  • Implement diet plans and diet orders using appropriate modifications. Ensure that all resident/patient data in PCC (Point Click Care) is updated daily and/or as required.  Meets with dietician regarding menu development, meal preparation and resident needs to ensure resident satisfaction and adequate nutrition.
  • Develop and implement menus by reviewing feedback from residents, work with dietician to ensure regulatory & specific diet compliance and provides Executive Chef and Food Service Director suggestions for menus.
  • Review/audit temperature logs, meal tickets, tray cards & test tray data for completion and accuracy and follows up with staff if necessary to address omissions and/or errors.
  • Conduct regular Handwashing Audits, Sanitation Audits, Product Date & Label Audits & Disaster Cart Content Audits. Follows up with staff as required to address deviations from standard, established practices.
  • Protects food in all phases of preparation, holding, service, cooling, and transportation.
  • Purchase, receive, and store food following established sanitation and quality standards. Maintains an adequate level of inventory to meet the needs of the department.
  • Purchase, store, and ensure safe use of chemicals and cleaning agents
  • Manage kitchen equipment use, ensure preventative maintenance is performed and repairs scheduled ASAP as needed.
  • Control costs by reviewing portion control and quantities of preparation; minimizing waste; ensuring high quality of preparation.
  • Maintain safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures; complying with local and State regulations.
  • Maintain ambiance by controlling lighting, background music, linen service, glassware, dinnerware, and utensil quality and placement; monitoring food presentation and service.
  • Maintain required certifications (eg CDM, Servesafe, BLS, etc) and update job knowledge by participating in Centrastate and other educational opportunities; reading professional publications; maintaining personal networks; participating in professional organizations.
  • Enhance department and organization reputation by accepting ownership for accomplishing new and different requests; explore opportunities to add value to job accomplishments.
Qualifications

  • A two or four year degree in Culinary Arts, Hospitality or Business preferred
  • Certified Dietary Manager (CDM) certification either upon hire or obtained within one year of hire. 
  • Current Serve-Safe certification. 
  • Experience with PCC (Point Click Care)preferred but not required
  • Two years’ experience in Assisted Living and/or Long Term Care in a management capacity
  • Active Listening – Give full attention to residents, staff and managers, take time to understand points made & ask questions as appropriate
  • Reading Comprehension – understand written communications related to work
  • Writing – Communicate in a professional manner when writing and use appropriate verbiage for the audience

  • Service Orientation – actively look to assist residents and staff members
  • Learning Strategies – implement effective measures to train “adult learners” in the required procedures and standards of the operation
  • Negotiation – assist in reconciling work related differences between staff members as needed
  • Instructing – teach others about new regulations, policies and/or procedures related to operation as required
  • Personnel Management – Motivate, develop & direct staff – identify the best staff member(s) to complete the job
  • Judgement & Decision Making – consider all relative costs, benefits and/or potential ramifications of decisions to determine the most appropriate action
  • Time Management – Manage one’s own time and monitor employee’s actions to ensure completion of all required tasks
